CHARDONNAY - technical specification

Grape type: CHARDONNAY
Vineyard size: 0.70 hectares
Training system: Sylvoz
Average age of vines: 20 years
Soil: clayey (70% clay)
Harvest: first ten days of September
Yield: 150 quintals per hectare
Vinification: grapes harvested and selected by hand. Light maceration of the skins for around 12 hours at 12°C. Pressing and addition of selected yeasts.
Alcoholic fermentation: temperature-controlled (max 18° - 20°C) in stainless-steel tanks Ageing: six months in steel
Bottling: following ageing, the wine is bottled at Introvigne in Codognè
Ageing: one month in bottle
Average annual production: 5,000 bottles
Tasting notes: pronounced, complex aroma with hints of golden delicious apples, flowers and fresh breadcrust; subtle, pleasantly aromatic flavor.
Match with: hors d'oeuvres, pasta and broths, egg-based dishes and fish dishes, even those with strongly flavored sauces.
Serving indications: serve at a temperature of 10° - 12°C
